| Swiss Chard - Mixed Colors. On April 30, 1774, Jefferson sowed "white beet," another named for leaf-beet or Swiss Chard. While Jefferson's variety was most likely a green leaf with white ribs, scarlet and yellow-ribbed varieties were available by at least the second half of the 19th century. In Vilmorin-Andrieux's The Vegetable Garden (1862 printing) a combination of white, scarlet, and yellow-ribbed Swiss Chard leaves are illustrated.
